Cowboy “Caviar” is a good word choice to compare just how good this is. Food of the gods works too. The first time I tried Cowboy Caviar I wasn’t sure how I’d like it, but after about three bites, I was hooked. We can make a meal out of it at our house. I’ve shared it at gatherings, and it goes over very well. I like to make recipes my own, so I’m not always real specific. I encourage others to do the same. You start off with a big bowl and combine all these ingredients:
3 cans of your favorite beans. Navy, kidney, black, chickpeas, black-eyed peas, pinto beans, etc. Be sure to rinse the beans before dumping them into the bowl. I like the Navy, Kidney, and black combination for the color. There’s all different kinds of beans out there. Experiment.
1-1/2 -2 cups of corn
1 red onion
1 green pepper
1 large tomato
1 or 2 avocado
Crush a clove of garlic
1/4 c. FRESH lime juice
Add some Wishbone Red Wine Vinaigrette and gently stir it into the all the ingredients that you have put into a large bowl and toss.
Cowboy Caviar is a tasty vegetarian dish for your friend who do not eat meat. I have not done it yet, but I can see where some hot peppers would make this an even more interesting dish as well. Some chunks of cheese might make it interesting too. It’s not one of those things that tastes just as good the next day, though. It’s better eaten while everything is fresh. Okay, okay, I didn’t come up with this all by myself. I found it on Pinterest, but I made a few changes. Like I said, I like to make them my own. Have fun and enjoy!
